Method
Soft-boil the eggs
Bring water to a rolling boil. Lower in eggs and cook exactly 6½ minutes. Transfer to ice water 2 minutes, then peel. Set aside.
Build the broth
Heat bone broth over medium heat. Add garlic, ginger, miso, tamari, and sesame oil. Whisk until miso dissolves. Simmer 5 minutes — do not boil hard or you destroy the gut-healing gelatine.
Cook the noodles
Cook noodles per packet instructions in a separate pot. Drain and divide between two deep bowls.
Blanch the vegetables
Blanch bok choy halves in the broth 90 seconds. Remove with tongs and arrange beside the noodles. Add rehydrated shiitake mushrooms.
Assemble
Ladle hot broth generously over the noodles and vegetables. Halve the soft-boiled eggs and nestle into the bowl.
Garnish and serve
Scatter spring onions, sesame seeds, and nori. Add chilli oil if desired. Serve immediately.
