Ingredients

  • 200 g broccoli florets
  • ½ ripe avocado
  • ½ cucumber, ribboned
  • 2 tbsp pumpkin seeds
  • 1 tbsp broccoli or alfalfa sprouts
  • 2 tbsp tahini
  • Juice of ½ lemon
  • Small handful fresh mint
  • 1 garlic clove
  • 2–3 tbsp cold water
  • Pinch of sea salt

Method

Step-by-step instructions

Steam the broccoli

Steam broccoli florets 4–5 minutes until just tender with a slight crunch. Do not over-cook — sulforaphane drops significantly with prolonged heat. Transfer to a bowl immediately.

Make the dressing

Blend or whisk tahini, lemon juice, mint, garlic, water, and salt until smooth and pourable. Thin with extra water if needed.

Assemble the bowl

Arrange broccoli, avocado slices, and cucumber ribbons in a bowl. Scatter pumpkin seeds and sprouts over the top.

Dress and serve

Drizzle mint-tahini dressing generously. Eat immediately while the broccoli is warm.

Pro Tips

Broccoli sprouts contain up to 100× more sulforaphane than mature broccoli.
For maximum anti-bloat effect: eat slowly, chew thoroughly, and avoid cold water during the meal.
Add ½ cup cooked quinoa for a more substantial lunch (adds ~130 kcal and 7g protein).
